Chimney Smoker

Barbecue purists, especially those who live in the South, will tell you that this is the only way to really barbecue: slow cooking with lots of smoke. This style of cooking is also common in China and elsewhere throughout the world.
Though it does not take up a large space, this smoker will handle up to 10 chickens, roasts, or whole fish at a time. Because it circulates intense, smoky heat around whatever is being cooked, there is no need to turn the food, and you end up with meat that is juicy yet drained of excess fat.
The Design
The heart of the system, the chimney, is a simple cylindrical concrete drainpipe about 2 feet in diameter and 4 feet tall. A square hole cut in the bottom of the drainpipe and positioned next to an adjacent fire pit allows smoke and heat from the fire to enter the chimney. You control the heat by moving the fire nearer to or farther from the chimney's hole and by opening or closing a metal lid atop the chimney.
The chimney and the outer part of the fire pit are made of standard brick. Firebrick is used inside the fire pit. You may choose not to face the chimney with bricks. The chimney could be left plain or be covered with stucco.

This kitchen has it all: a pizza oven, a sink with running water, a large grill, a side burner, warming trays, and a refrigerator plus a spacious overhead structure. An ambitious installation like this is generally best left to pros.
The Design
The main section of the L-shaped counter is about 10 feet longenough to accommodate the appliances with a modest amount of counter space. The leg of the L, which is 4 feet long, provides additional countertop space. Because the appliances and doors must fit into a tight space, the builder chose to make the front wall out of cast concrete rather than concrete block. A concrete wall can be formed in just about any shape. The other counter walls are built of 6-inch concrete block. The backsplash is framed with wood. A 2-inch-thick steel-reinforced concrete substrate is poured and allowed to cure, then covered with salmon-colored ceramic tile set in thinset mortar.
Quite a few utility lines run under a counter like this. A gas line feeds both the grill and the side burner. A water line runs to the area beneath the sink, where it hooks up to an on-demand water heater to supply both hot and cold water. The drain line leads to the house's main sewer line. Electricity powers a receptacle on the backsplash, as well as receptacles inside the counter for the warming drawer, the grill's rotisserie, and the refrigerator.
To the left of the counter is a pizza oven made of refractory concrete. The oven is housed in a structure made of concrete block and rests on a raised concrete slab. The oven is topped with a tile roof. Both the oven and the counter are covered with white stucco.
