2⁄3 cup all-purpose flour
1 cup sugar
1⁄2 cup unsweetened cocoa
1⁄2 teaspoon baking powder
3 tablespoons butter, melted
1 large egg
1 large egg white
1⁄2 cup milk chocolate–covered raisins (such as Nestlé Raisinets)
Cooking spray
1. Preheat oven to 350°.
2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 6 ingredients in a medium bowl, stirring well (mixture will be thick and crumbly). Let mixture stand 10 minutes until dry ingredients are moistened. Fold in chocolate-covered raisins.
3. Press mixture into an 8-inch square pan coated with cooking spray. Bake at 350° for 23 to 25 minutes. Cool in pan on a wire rack.
Yield: 16 servings (serving size: 1 brownie).

Rustic Tomato-Olive Pizza (see photo in more views)
Prep: 4 minutes; Cook: 10 minutes
2 teaspoons yellow cornmeal
1 (14-ounce) Italian cheese-flavored pizza crust (such as Boboli)
Cooking spray
1 (28-ounce) can fire-roasted diced tomatoes, drained
1 cup (4 ounces) preshredded mozzarella and Asiago with roasted garlic cheese blend (such as Sargento)
1⁄4 cup sliced pitted kalamata olives, sliced
Chopped fresh oregano
1. Preheat oven to 450°.
2. Cover a large baking sheet with parchment paper; sprinkle with cornmeal. Place pizza crust on top of cornmeal; lightly coat with cooking spray. Top with tomatoes, cheese, and olives.
3. Bake at 450° for 10 minutes or until lightly browned. Sprinkle with oregano, if desired. Cut into 8 slices. Yield: 8 servings (serving size: 1 slice).
