Hamburger on Garlic Toast with Watercress and Stilton

Here's an elegant burger, served open-faced with crisp garlic toast and watercress on the bottom and crumbled Stilton on top. Use extra watercress to make a salad, adding some Belgian endive (chicory/witloof) and a mustard vinaigrette, if you like.
1 lb (500 g) ground (minced) beef chuck
1 1/2 teaspoons salt
Freshly ground pepper
1/4 cup finely minced green (spring) onion, white and pale green parts only
3 tablespoons olive oil
4 oz (125 g) Stilton cheese, at room temperature
4 slices coarse country bread, about 1/3 inch (9 mm) thick
2 cloves garlic, halved
2 cups (2 oz/60 g) water cress leaves, thick stems removed
1. Place the beef in a bowl and season with the salt and pepper to taste. Stir in the onion, mixing well. Gently shape into 4 patties, each 1/2 inch (12 mm) thick.
2. Prepare a hot fire for direct-heat cooking on a grill. Place the patties on the hottest part of the grill and cover the grill. Grill until the underside is crisp, 4-5 minutes. Turn over the patties, and grill until done to your liking, about 4 minutes for medium.
3. While the hamburgers cook on the second side, crumble half of the Stilton on top. Using a knife, smash the Stilton so that it melts onto the hamburgers. Transfer the hamburgers to a plate; keep warm.
4. Place the bread slices around the edges of the grill rack and toast lightly. Remove from the grill and rub one side well with the cut sides of the halved garlic clove. Put 1 piece of toast on each of 4 individual plates, garlic-rubbed side up. Top with the remaining Stilton, crumbling it evenly over the toast, then with the watercress. Top the watercress with a patty. Serve hot.
