Chicken Cobbler Casserole

6 Tbsp. melted butter, divided
4 cups cubed sourdough rolls
1/3 cup grated Parmesan cheese
2 Tbsp. chopped fresh parsley
2 medium-size sweet onions, sliced
1 (8-oz.) package sliced fresh mushrooms
1 cup white wine
1 (10 3/4-oz.) can cream of mushroom soup
1/2 cup drained and chopped jarred roasted red bell peppers
2 1/2 cups shredded cooked chicken
1. Toss 4 Tbsp. melted butter with next 3 ingredients; set aside.
2. Sauté onions in remaining 2 Tbsp. butter in a large skillet over medium-high heat 15 minutes or until golden brown. Add mushrooms, and sauté 5 minutes.
3. Stir in wine and next 3 ingredients; cook, stirring constantly, 5 minutes or until bubbly. Spoon mixture into a lightly greased 9-inch square or 11 x 7 inch baking dish; top evenly with bread mixture.
4. Bake at 400° for 15 minutes or until casserole is golden brown.
Makes 4 servings.
Double Chocolate Cheesecake
This recipe took first place in the cake category at the 2005 Chocolate Lover’s Festival at the Inn of the Ozarks in Eureka Springs, Arkansas.

PREP: 20 MIN., BAKE: 1HR., CHILL 9 HRS
1 ½ cups cream-filled chocolate sandwich cookie crumbs (about 18 cookies)
1 (12-oz.) package semisweet chocolate morsels
3 (8-oz.) packages cream cheese, softened
1 (14 oz.) can sweetened condensed milk
2 tsp. vanilla extract
4 large eggs
Ganache Topping (see recipe in next tab!!)
Press cookie crumbs into bottom and halfway up sides of a 9-inch springform pan; set aside.
Microwave chocolate morsels in a microwave-safe bowl at HIGH 1 ½ minutes or until melted, stirring at 30-second intervals.
Beat cream cheese at medium speed with an electric mixer 2 minutes or until smooth. Add sweetened condensed milk and vanilla, beating at low speed just until combined. Add eggs, 1 at a time, beating at low speed just until combined after each addition. Add melted chocolate, beating just until combined. Pour cheesecake batter into prepared crust.
Bake at 300° for 1 hour and 5 minutes or until center is set. Turn oven off. Let cheesecake stand in oven 30 minutes with oven door closed.
Remove cheesecake from oven; run a knife along outer edge of cheesecake, and cool in pan on a wire rack until room temperature. Cover and chill 8 hours.
Remove sides of springform pan, and place cake on a serving plate. Slowly pour and spread warm Ganache Topping over top of cheesecake, letting it run down sides of cheesecake. Chill 1 hour before serving.
Makes 8 to 10 servings.
Kitchen Tip: Chill the cheesecake with the sides of the pan intact until it’s time to pour on the topping.
Ganache Topping
(topping for Double Chocolate Cheesecake recipe in previous tab)
PREP: 10 MIN., COOK: 3 MIN., COOL: 30 MIN.
This mixture of chocolate and whipping cream, when properly made, pours over the cake like a glaze.
¾ cup whipping cream
1 (6-oz.) package semisweet chocolate morsels (1 cup)
1 (6-oz.) package milk chocolate morsels (1 cup)
Bring cream to a boil in a saucepan over medium heat; quickly remove from heat.
Stir in semisweet and milk chocolate morsels until melted and smooth.
Let mixture cool until slightly warm (30 minutes); then pour and spread over cheesecake.
